Cow Feet Soup (شوربة كوارع)

Slow-simmered, deeply nourishing, and rich with tradition, cow feet soup is a beloved Sudanese comfort dish passed down through generations. Made by gently cooking cow feet for hours, the broth becomes naturally gelatinous, silky, and fullof body, infused with warming spices, garlic, onions, and herbs that bring bold flavour to every spoonful. Rich in collagen & gelatin, this soup supports joint health, skin elasticity, hair & nails.

Ingredients

3 liters waters

8 raw veal/cow feet

2 sweet onions (medium)

2 shallots

2-5 thai chillies

12 garlic cloves

2 tbls salt

1 tbls black pepper

14 whole cloves

7 bay leaves

15 green cardamom

1 cinnamon stick

1/2 tbls whole peppercorns

1/3 cup white vinegar

Instructions

1. Clean the cow feet thoroughly

Rinse well, then scrub with lemon or vinegar. Some people parboil them for 5–10 minutes, discard the water, and rinse again to ensure cleanliness.

2. Prep the Vegetables

Chop shallots, onions, garlic, hot chilli peppers

3. Slow cook the soup

Place the cow feet in a large pot and cover with plenty of water. Bring to a boil, then lower to a gentle simmer. Stir in salt, whole cloves, bay leaves, 
green cardamom, cinnamon stick and peppercorns. Throw in the chopped vegtables and vinegar as well. Cover and cook for 2.5–4 hours, until the meat 
is tender.

4. Adjust & Serve

Taste and adjust salt or spice. The soup should be rich, silky, and slightly sticky from natural gelatin.
